Cajun is a combination of American and Italian cheeses blended with six different types of peppers so you get continual heat from start to finish.
One of the most difficult things when making spicey hot cheeses is that the whole milk cheeses actually work against the spices and calms them down. When we first make the cheeses the heat is much hotter than the end product because the fats in milk naturally absorb the peppers. We have worked very hard to find the right balance between the flavor and the heat in all our Cheeze blends.
Cajun Cheeze is a party favorite and great for football parties. It also can be served heated as queso dip. Add some shrimp, crabmeat or crawfish to a bowl and you will have a spectacular dip with french bread.
